Benefits of an endgrain cutting board
#1: Durable
End-grain cutting boards are guaranteed durable. It doesn’t get any damages so quickly due to its ability to re-oil and recondition itself. Although most of the wooden cutting boards have self-healing properties, wooden cutting boards that are designed end-grain have better self-healing abilities than an edge-grain cutting board.
#2: Safe to knife
One of the most notable advantages of owning an end-grain is cutting board its ability to keep the knife’s sharpness even after you have used it on tough ingredients. The reason behind this is its structure.
As mentioned, the end-grain cutting board is formed in a vertical structure, which benefits the knife. The cutting board has “catch and release action”, where it safely catches the knife between the wood’s fibers and safely releases it. Through this mechanism, it protects the blade of the knife from rust and dull.
#3: Low-risk of food cross-contamination
Since end-grain cutting boards are better in self-healing, the probabilities of food cross-contamination are low. When you try to cut an ingredient on a wooden board and washed it after, the wood will try to self-heal; it will keep the bad bacteria from the previous ingredient trapped inside the wood and killing it when the wood dries out.
So, if there is a low risk of food cross-contamination, it is safer to use it for several occasions.
